that properly used, Scotch Bonnet is one of the best chillies and not overpowering at all. But *not scratching noses* is very important.

Honestly, one can cook with the things quite happily and they just add a nicely rounded spiciness to a dish. Much better than many chillies.

They sell them in big punnets containing fifteen or twenty of them, around here. I cannot imagine using all those before they went off.
