The entire point of combat to them is to test the mettle of their metal
Why would you dodge? Do you not trust the workmanship of your armor?
Other races clearly only dodge because their armor smithing is so inferior to dwarven armor smithing
Your human armor is no match for dwarven weaponsmithing
also I remember in 3.5 they had an ability where they either couldn't be knocked down or had advantage against a roll where they would otherwise be knocked prone
I mean it makes sense! them not dodging and the being harder to knock down
