Thanks. I wanted something 'festive' but I'm not roasting a whole chicken/turkey for just myself. So baked chicken breasts and stuffing waffles seemed like a good compromise.

Made cookies last night for desert tonight too.

If anyone has a waffle maker and wants to make these, it's just a box of stovetop stuffing mix made to package directions (raisins can be added if wanted) then you let that cool a bit and add 1 large egg and about a teaspoon of flour.
Mix well and cook in the waffle maker until firm.

They're a bit soft, so you'll want to lift them out with support underneath.

You can leave them in till the outside crisps, but that's personal taste.

The chicken looks a bit sad though. Lol

I remember why I shouldn't be allowed to have a waffle maker...
