On foot, the Star Trek crews are in nontrivially greater danger even if you don't have Force bullshit going down.

At the ship scale, Trek has more manipulable warp tech, faster ship-scale impulse, shields are valued more highly, and frankly, better heavy weaponry.

The biggest danger to Trek ships against an Imperial force isn't the Star Destroyer, but Tie Fighters trying to harass from many angles... And Starfleet does have counters for that in later media.

the biggest problem for Starfleet is the inability to force an engagement - hyperdrive being several orders of magnitude faster than warp. they'll win any ship to ship engagement, but after a few encounters, they'll lose logistically

That’s true, though it also worth noting that hyperdrive mostly relies on hyperspace routes, and also just seems to fail entirely beyond the edge of their galaxy, so it depends which galaxy these engagements are happening in to

The Empire spots this ship, freaks out, attacks, and gets OOCP'd hard. Hard enough that Darth Vader declares that the Enterprise has his undivided attention - which is only made worse when in the ensuing scramble they wind up with R2-D2 on board.

This sets up the Enterprise ship up against the goddamn Death Star, backing the Rebel Fleet. A Photon Torpedo in the right spot equals Problem Solved... If they can find where to aim it. The best options for that? Rebel X-wings - what do you mean there's people that need a rescue on board?!

This puts an Away Team up with sneaking onto the ship, getting commbadges onto Leia and co, and teleporting clear. Which is complicated by two little facts - first, Han isn't leaving without the Falcon. Two, again, Darth Vader.

Key point is: The Enterprise crew stand no chance in a direct engagement... But have decent stealth. And Stormtroopers vs. Shax's if he's in melee range with a pipe? Shax's wins.

Obi-Wan still sacrifices himself, but some quick thinking lets Shax's grab Obi-Wan's saber for 'future use'. He's got Thoughts about Obi-Wan disappearing like that to work through later, but first, they get out - grabbing the Falcon and getting away with a quick Hyperspace jump. At which point the Enterprise catches the tracking beacon.
