Why would you specificy egg for an omelette though? All omelette have eggs that’s what makes them an omelette. That’s a bacon and cheese omelette.

I want the cheese melted on the bacon which is over the egg to make a cohesive and melded item that doesn't slip around on me. if the egg is between the cheese and whatever sandwich material is being used for it, it leaves lightly melted cheese and bread item since it wont stick to the egg. This is a textural sin to me. But that's the only reason.

my hypothesis is it's because bacon + egg is the only order where you get a consonant-sound ending followed by a vowel-sound beginning. which just feels nicer to say and flows more smoothly off the tongue

and the "and" always comes in front of the last item in the list, so of course the two items that go well next to each other would be the first two items in a 3 item list

even if you leave out the "and" and say "bacon, egg, cheese" it doesn't feel as nice
