i have spatchcocked the bird, shoved an entire stick of herb compound butter under its skin, covered it in salt, and stuck it in the fridge to desiccate

i took the turkey neck and spine and tossed them in a pot with a mirepoix and some nice herbs and two boxes of turkey stock and let that turn from 4 cups of turkey stock into 3 cups of Better turkey stock

o yes i also salvaged all the turkey meat and skin from the neck and spine and chopped that up real nice so i can toss it into the gravy
