One theory can be that an alchemist must know all aspects of a certain mechanical object before transmuting it.

One can argue that Edward has seen the "truth" and therefor should already know every mechanical aspect of automail. o_o

I just say that if he could do that Winry wouldn't appear in as many scenes as she would have right now.
