when you say "unpeeled garlic," do you mean it has been unpeeled (peel removed), or it is unpeeled (with peel)?

good point alanna. garlic with peel on. cuz it's easier to peel after it's cooked.

it's easier to peel once it's been cooked. just like blanching the tomato and charring the chile helps to remove the skins.
it's all a pretty fast process.
never cooked unpeeled garlic in a recipe but loves roasting a whole head in salt and olive oil and squeezing cloves into her mouth.
might try the salsa some time....
