quartered and trimmed a 5lb pork butt roast. Applied a dry rub of seasonings and spices and wrapped in saran-wrap to absorb said flavors.

As early as this time or later Monday evening I could have 7lbs of my own pulled pork. From my own crockpot.

I have more of the dry rub left over, which after the meat cures, I'll add to the chicken stock and hamhocks and meat to cook.

we had home-ground burgers cooked over charcoal for dinner. my inlaws have a charcoal grill that uses propane to light the briquets.

Weirdly I used a five pound roast, and 1.25lbs of hamhocks and I ended up with only 5 x 1lb containers of pulled pork.

I think some of the weight was the bones in the hamhocks. Either way... OMG it turned out amazing!

I did deviate from the recipe a smidge by adding 2 additional tablespoons of brown sugar. It had to much tang from the cider vinegar.
