Canon OCs are actual characters from canons that allow a lot of customization for the audience, usually video games.
For example, the protagonist from Dragon Age or Fable or Skyrim (I think, lol haven't played it) are canon OCs.
Fandom OCs are characters that don't appear in the canon at all but are said to be from it, like fantrolls from Homestuck or if you made a ninja from Naruto's village, etc.
Canon OCs also include those you make for WoW or Guild Wars or table top rps.

Fandom OC's are characters that are created in the canon they're from and generally they're either a love interest or know the canon characters in some way, shape or form. Sometimes they're family members.
