Okay, what the heck is a tri-tip?
It's a cut of beef that's popular in Central Coast CA. Slightly tough, but also boneless, with a rich flavor, enough fat that it's almost impossible to cook badly. It's good at almost any stage of done-ness.
Central Coast CA tends to have it in the stores at all times, and hogs much of the US supply.
It's popular for slow grilling, but also great for indoors roasts. Leftover tri-tip may be the best roast beef in the world.
