you boil wort to make beer. If you put the yeast into boiling wort, it dies. In fact, you have to lower it to below 80F before you add the yeast. That step from 212F to 80F used to take an hour.

besides saving time, between 120F and 200F, off-tastes are developed, so you want your wort cold ASAP.

built a counterflow back in the day...it worked nice...but did I really have any problems just waiting longer?...
