My instinctive go-to lunch is a salad with some kind of meat (either tuna or leftovers, usually) but especially since I started running, that seems to not quite cut it.
Hmm.. it's been ages since I made sushi. Occasionally I grab some at the booth thingy at the commissary, but my copy of sushi for dummies has been sadly neglected..
I make a soup on a Sunday (kale, chicken or sausage, celery, carrots, onions). I usually store it in the fridge for the week and use it to break up my lunches.
