I don't like too much cheese, I'm much more likely to do macaroni + olive oil + parmesan or pecorino sprinkles vs a gooey cheese thing.

Yep!! It's a pretty easy technique. If you want to do something more involved, you can sauté the skin while the oven preheats, to make it extra crispy
