I used powdered milk (Birch Tree. It's everybody's milk.) to make Kefir milk for the first time. I used regular milk (Magnolia, Harvey Fresh, etc) before and I assumed same fermenting time. Nope. They fermented much faster. Twice as fast in fact. I almost lost the batch. :-D

Either the microorganisms are more active now after more "experience" in fermenting, or they just like Birch Tree more. Like junk food. :-D

Also, based on our experience, powdered milk spoils faster than regular milk in our kid’s milk bottle

The secret to yummy kefir cheese? Melt some butter and mix it in. :-D Wait for it to cool though before mixing. Don't want to kill our little friends.
