every time I host I have to figure this whole turkey thing out again. I can never remember what I did the last time. And it's always scary wondering if it's going to come out even remotely ok.

I have had the same fears. This is something you only cook once a year or less.

mashed potatoes and stuffing and squash, salads, all the sides are easy, but the turkey and gravy are like this huge gauntlet every time lol

I also think it's odd that feeding 13 people seems like such a monumental task, and yet a couple of generations ago, that wasn't an overly huge family. Someone, lots of folks, did this every day :-P

I know what you are saying about the turkey. We cook for 7 everyday but for some reason the turkey is always a worry!
