well it's a lot easier to model a second piece with the same tetures, similar uv and all the bugs worked out, that's for sure

Yes and, if you duplicate something it retains the UV, so say if you're going to make 10 marshmallows, uv it and then duplicate it, then they can all use the same uv.

Or a better example, the same arm shape on your sofa and chair, you just make it shorter for the chair, that can be unwrapped once rather than twice.

Not always/but you can depending on what you need/want to do!

The uv's stack on top of one another if you uv unwrap then duplicate, but you can move them about if you don't want them to use the same texture and want each piece to have unique shadows/colors.
